Directions

  1. Preheat oven to 350° F (180° C).
  2. Place cupcake liners in a standard muffin tin.
  3. Whisk flour, baking powder and salt in a learge bowl.
  4. Heat butter and milk for 2 minutes in the microwave.
  5. In a separate bowl, beat eggs for 30 seconds on a handheld beater, then add sugar and continue beating.
  6. Add the flour and continue mixing until combined.
  7. Pour hot milk, vanilla, and oil into the bowl and combine.
  8. Pour batter into muffin tin, filling 2/3 of the way up.
  9. Bake for 22 minutes or until golden brown.
