Blueberry Muffin

Muffins are a perennial favorite because they’re quick and easy to make and the flavors are endless (just like scones). Everyone appreciates a fresh batch.

Directions

  1. Soften butter (preferably room temperature) and mix with sugar until combined and fluffy
  2. Add whisked egg in separately, whisking between each time best to preheat oven to 180C here
  3. Add flour in alternating with milk in 3 goes starting and ending with flour
  4. Pour milk in alternating with sifted flour in 2 goes
  5. Add in 50 grams of your topping (in this case blueberries) and mix with a spatula
  6. Spoon into muffin container and put into oven for 20-25 minutes
  7. Enjoy!
