Crumbling Coffee Cake

A light and fluffy vanilla cake topped with buttery cinnamon crumbles, often enjoyed in the morning with coffee, but it may just be an all day kind of treat (9 servings).

  1. In a small mixing bowl, combine all topping ingredients. Blend with fork until crumbly and set aside.
  2. Preheat oven to 375° F (190° C).
  3. Sift 1 1/2 cups sifted flour with baking powder and salt into a bowl
  4. In a medium bowl, beat together beaten egg and 3/4 cup sugar wth 1/3 cup melted butter. Add in vanilla.
  5. Switch off between adding in the flour mixture and milk to keep mixture from getting too dry or too wet to combine properly.
  6. Once the batter is all mixed in, pour into a greased and floured 8-inch square pan. Sprinkle the topping evenly over the batter, using your fingers if needed to sprinkle the thicker pieces.
  7. Bake at 375° F (190° C) for 25-30 minutes, checking if the cake is done with toothpick insertion.
