Loaded Baked Potato

A hearty russet potato sliced open and loaded with parmesan cheese, a spicy serrano pepper, and a juicy smoked sausage wedged right in the middle. Simple, satisfying comfort food at its best (1 serving).

  1. Preheat oven to 400° F (200° C).
  2. Scrub the russet potato clean and pat dry. Rub all over with olive oil, salt, pepper, and garlic powder.
  3. Pierce the potato several times with a fork. Place directly on the oven rack and bake for 55-65 minutes until the skin is crispy and the inside is tender.
  4. While the potato bakes, slice the smoked sausage lengthwise down the center without cutting all the way through, so it butterflies open. Pan-fry over medium heat for 3-4 minutes per side until browned.
  5. Remove the potato from the oven and let it cool for 5 minutes. Slice it open lengthwise and press the sides to open it up wide. Add the tablespoon of butter inside.
  6. Generously sprinkle parmesan cheese over the inside of the potato. Layer the sliced serrano pepper on top of the cheese.
  7. Wedge the smoked sausage into the opening of the potato. Serve immediately and enjoy!
