Summer rolls are a refreshing and light dish typically made with fresh vegetables, herbs, and shrimp, all wrapped in soft, translucent rice paper. (12 servings).

Ingredients

Directions

  1. Cook shrimp for 2 minutes in boiling water. Set Aside to cool.
  2. Cook rice noodles for 4 minutes in boiling water. Drain.
  3. Rinse rice noodles in cold water to stop the cooking process.
  4. Peel shrimp and cut in half lengthwise.
  5. Wash and dry lettuce, mint leaves and cilantro.
  6. Julienne cucumber into thin strips
  7. Shred Carrots (if used)
  8. Fill shallow bowl with warm water.
  9. Dip rice paper rolls one at a time for 5-10 seconds and then place on cutting board
  10. Dip small handful of rice noodles on center of each rice paper,
  11. Add 2 full shrimp per roll
  12. Add a bit of lettuce, cucumber, mint leaves, cilantro and carrots to each roll. Be sure to not overfill.
  13. Carefully fold the sides of the rice paper in over the filling.
  14. Starting from the end closest to you, tightly roll the wrapper.
  15. For the dipping sauce, whisk together all of the ingredients in a bowl. Add warm water to thin sauce to desired consistency.
